“Do you really like it on me?” asked Thomas Keller sincerely, of a $30K rose-gold watch encircling his fuzzy, tanned wrist, on loan from Vacheron Constantin. Grub assured him it looked very handsome. “Not too feminine?” Nooo, chef Keller, very manly. “Okay, because I usually only wear silver, so this is a new experience for me.” Yeah, well, the experience of spending an evening at one of New York’s most sprawling, Gossip Girl–like mansions, lounging around a kitchen with Keller (who is, on the record, easier to talk to than a well-paid shrink) was kind of new to us, too.

On the east coast, New York features Missy Robbins of A Voce Columbus and A Voce Madison, Anita Lo of Annisa and Top Chef Master’s fame, Donatella Arpaia of Anthos, April Bloomfield of The Breslin, and Kathy Wong of Laut.

People have been debating the quality of different towns’ food as long as there’s been permanent settlement. Back in old Babylonia, there were probably great arguments over who had the best flatbreads, Ur or Sumer. But until recently, it was hard to agree on a global standard by which to compare cities across the world. Every city has its own restaurant critic — but can you really judge four stars from the New York Times the same way you judge four bowls of soup from Singapore’s Makansutra guide? Of course not.
But there is one guide that might hold a tentative key: Michelin.
